Over 100 years ago our Great Grandfather began distilling a traditional ouzo to accompany the chargrilled seafood being served at the family restaurant next door.

His passion for good food only grew stronger, always pairing every dish with the perfect drink. He embraced the Aperitivo culture wholeheartedly, with "Slow Drinking" becoming the reason guests returned — a tradition that soon became deeply woven into our family’s way of life.

Distilling and macerating a variety of herbs and fruits became a true labour of love, with careful attention paid to how each one behaves. This laid the foundation for our approach today — treating each botanical individually, as we've learned that every ingredient requires its own unique process to unlock the best possible flavour.

After migrating to Australia, our grandfather set up shop in Ringwood, supplying pubs and bars with his clear spirits and liqueurs. His only form of marketing was word of mouth and that was all he needed.

After a long journey and as time caught up with my grandfather at 94 and my uncle at 70, the youngest generation,Sarkis, teamed up with his best friend Alec, a Melbourne-based graphic designer, to launch the Three Foxes project at 12 Helen St and carry forward the craft and legacy built by the generations before them.

Our expansion called for some new digs! We took over the adjacent warehouses to expand the address to 12-16 Helen. A place for all the things we love, from our shag carpet and classic world cup memorabilia, to the glassware from our grandmother’s kitchen. There’s always a killer tune playing over the sound system and laughs being shared in the bottling room.

We finally flung open the doors for celebrations and good times. Oh ... did we mention the giant disco ball? It spins proudly above the distillery floor, lighting up our custom-built pot still like the absolute queen she is.
